ABOUT MUTTON PAYA:

Mutton Paya is a popular breakfast dish in South Asia. Normal accompaniments are Indian Bread.  In South India they relish it with Iddiappams.

INGREDIENTS for Mutton Paya:

PAYA : 12 nos.
Onions 200gms.
Oil 50 gms.
Ginger-Garlic Paste: 80 gms.
Turmeric Powder: 2 gms
Red Chilly Powder: 10 gms.
Coriander Powder: 10 gms.
Green Chilies: 2-3 nos. without stem
Tomatoes: 30 gms.
Ghee(clarified butter): 20 gms.
Cumin Seeds: 5 gms
Fenugreek whole: 2 gms.
Wheat Flour: 20 gms.
Garam Masala Powder: 10 gms.
Salt to taste.

RECIPE:

1. Heat oil in a cooker.
2. Add onions and fry well.
3. Add ginger garlic paste, turmeric powder and washed paya.
4. Fry well for 15- 20 mins.
5. Add green chilly, tomato , salt and 1.5 litres water.
6. After 1 whistle lower flame and cook for 1 hr. on low flame.
7. In another vessel, heat pan heat ghee(clarified butter).
8. Add Cumin seeds, Fenugreek seeds, ginger garlic paste. Fry for 5 mins.
9. Add Red Chilli powder, Coriander powder Wheat Flour. Fry till you get a good smell.
10. Add paya mix from the cooker and boil. Add garam masala and boil till you get the required consistency of the gravy.
Paya can be had with Nan, Bread or Chapati-depending on each one’s taste and preference.
