Kadai Vegetable is a spicy Indian Dish that can be prepared in a dry form or one with gravy.

INGREDIENTS for Kadai Vegetable

Sunflower Oil 230 gms Onions 170 gms
Tomatoes 450 gms Ginger Paste 25 gms
Garlic Paste 25 gms Garam Masala Powder 10 gms.
Green Chillies 9 gms Coriander leaves 10 gms
Coriander Powder 24 gms Red Chily Whole 5 gms
Capsicum 200 gms Salt to taste
Mixed Vegetables 300 gms.

Recipe:

The recommended vegetables are: Carrot, Potatoes, Beans and Cauliflower.
Cut the capsicum into cubes. Vegetables are normally cut a little bigger than for any other mixed vegetable gravy.
Slice one small tomato for dressing. Make a puree from the rest.
Finely chop the onion. Chop coriander leaves.
Fry the chopped onions to golden brown color.
Add the ginger and garlic pastes and fry well.
Add the red chilies whole(without stem) and coriander powder. Fry for some time and add the vegetables including
Capsicum. Cover the vessel. When the vegetables are about half cooked add the tomato puree and cook till the vegetables are fully cooked.Add salt to taste.
Add water to get the required gravy consistency. If you prefer the dry variety no need to add water, just cook till it is almost fully dry.
Kadai Vegetable is ready for serving. Garnish with chopped coriander leaves and tomato slices.
