COMBINATION OF MAP + PASTEURIZATION:
MAP + Pasteurization helps the combination of two technologies to increase the shelf life of some food products. Only a few products have been so far tried and standardized by us. The example being Chicken Biryani. The combination of MAP + Pasteurization has given us a shelf life of 5-7 days at ambient temperature and of one month under chilled condition.
The process involves the gas flushing and sealing followed by pasteurization. The individual processes have been described in detail in the earlier sections.
We are working on this combination on many more products.
